A Culinary Flight to Haiti 🎥

An Manje: The Culinary Flight to Haiti is an unscripted mini series co-produced by The Global Taste and Deep Routes, created and led by Shana Jeannot-Thomas for An Manje’s anthological curriculum.

Haitian cuisine offers a truly diverse culinary experience throughout the 10 departments of Haiti, where rich, spicy, and explosive flavors range from region to region. This mini-film takes viewers on an inspiring journey to explore and celebrate the diverse traditions of Haitian cuisine right here in the melting pot of New York and New Jersey through the eyes of chefs Alain Lemaire, Nicky Marcelin, and Vanessa Coquillo. As these chefs tell their stories through their cooking, viewers are invited to learn more about Haiti and get excited to prepare Haitian dishes in their own homes.

Episode 1: Chef Vanessa Coquillo

Join Chef Vanessa Coquillo as she describes her experiences growing up cooking and enjoying Haitian cuisine.

In this first installment of the series we follow chef Vanessa Coquillo, mother, self taught chef, caterer, and photographer; who has roots in the Artibonite and Gonaives regions of Haiti. She shares her background growing up cooking and enjoying Haitian cuisine, as well as the influences and experiences she’s had on her culinary journey as she prepares Lalo ak Diri Blanc.

Episode 2: Chef Alain Lemaire

Join Chef Alain Lemaire as he prepares Poisson Au Coco while sharing his journey to becoming an award-winning chef.

In this second installment of the series we follow chef Alain Lemaire, award-winning chef and caterer; who has roots in the Southern region of Haiti. He shares his early experiences as a chef as he prepares a dish of Poisson Au Coco.
